Classic waffles.


Classic waffles

  • Ingredients:

• 2 cups all-purpose flour

• 1 tsp salt

• 4 tsp baking powder

• 2 tbsp white sugar

• 2 eggs

• 1½ cups warm milk

• 1/3 cup butter, melted

• 1 tsp vanilla extract

  • Method:

1. In a large bowl, mix together the flour, salt, baking powder and sugar then set aside.

2. Pre-heat your waffle iron to the desired temperature.

3. In a separate bowl, beat the eggs, then stir in the milk, butter and vanilla.

4. Pour the wet mixture into the dry mixture, and beat until well blended.

5. Ladle the batter into the hot waffle iron and cook until golden and crisp.

6. Serve immediately with toppings of your choice. – Capsicum Culinary Studio

Banana waffles

  • Ingredients:

• 2 medium-size ripe bananas

• 3 tbsp (45 ml) sunflower oil

• 1 cup coconut cream (keep the rest for serving)

• ¼ tsp salt

• ¼ cup oats

• 2½ tsp baking powder

• 1 cup cake wheat flour

• ½ tsp cinnamon

• chilled coconut cream for serving

• 2-3 tbsp toasted almonds, chopped (optional)

• fresh berries for serving

• golden syrup for serving

  • Method:

1. Mix the bananas, oil and coconut milk well, then add the salt, oats, baking powder and flour and fold through (don’t over mix).

2. Oil a waffle pan with greaseproof spray and add enough waffle mix to coat the pan – two ladles should do.

3. Bake until golden brown and serve with golden syrup, a dollop of coconut cream, sprinkling of nuts and berries. – SPAR

Simple berry compote

  • Ingredients:

• 125 ml water

• 500 g mixed berries

• 2-3 tbs sugar

• cinnamon stick

• vanilla pod

• sprig of mint (optional)

  • Method:

1. Bring the water to a boil in a saucepan.

2. Add the berries to the boiling water and bring the water back to a boil.

3. Add the sugar, cinnamon, vanilla pod and optional sprig of mint, and allow to simmer for five to 10 minutes.

3. Remove the cinnamon stick or vanilla pod and serve hot or cold, drizzled over your waffles with ice-cream or cream. – SPAR
